No, sadly, we don’t mean the fat-soaked, donor kebab kind you usually pick up as your stumble home from a night in the pub! But, a homemade barbequed kebab can be super healthy and nutrient packed. Skewer lean meat like chicken; fish such as prawns; or (for a really low-calorie option) tofu, with loads of diced veggies - courgettes, aubergines, mushrooms, peppers all lend themselves very nicely to being barbequed. Baste the kebabs in a tasty marinade such as Dijon mustard mixed with a bit of olive oil, white wine vinegar, lemon juice and garlic and grill until the meat is cooked and the vegetables are slightly charred.
